LOW GI FRUIT PANCAKES
(Serves 10)


PancakesINGREDIENTS
WET MIXTURE:
½ cup diet yoghurt (plain or fruit)
¾ cup low fat cottage cheese
1 cup low fat milk
2 eggs
1 tablespoon honey
1 tablespoon olive oil
½ cup chopped fruits: apples, pears, bananas, peaches, strawberries or blueberries
½ cup chopped nuts: pecans or walnuts (Optional)

DRY MIXTURE:
1 cup wholemeal flour
1/3 cup wheat germ
1/3 cup yellow corn meal
1 teaspoon baking soda
1 teaspoon baking powder

METHOD

  1. Beat together all ingredients for wet mixture. Beat well.
  2. Combine ingredients for dry mixture into wet mixture in a processor. Blend well.
  3. Pour 1/4 cup batter on hot fry pan. Turn pancakes over when bubbles appear. Take pancakes off fry-pan when steam appears.
  4.   Garnish with a strawberry.
